Every day, our pasta makers prepare in house a wide range of fresh egg pasta, using simple, carefully selected ingredients. The stuffed pastas range from the classic ravioli del plin and agnolotti to margherite and ravioli: filled with fonduta cheese and truffle, with a traditional vegetarian stuffing, with walnuts and gorgonzola cheese, with pumpkin or with vegetables, depending on the season. The king of these is the “Raviolo della gran tradizione”, with its singular filling prepared with three roast meats, Piemontese yearling veal, rabbit and pork, wrapped in a thin, velvety pasta. The pasta factory also offers a great variety of dried durum-wheat pasta bronze-drawn into countless shapes.
